MX (Mail Exchange) records specify which mail servers accept incoming emails for a domain. Priority numbers (e.g. 10, 20, 30) dictate failover routing: sending mail servers always attempt delivery to the lowest priority number first. If the primary server is unreachable, traffic fails over to the next numerical server.
